Weekend Reads
Personally on the weekends and I have a quite and relaxing morning I love to read through some cooking magazines. When I get a new one in the mail during the week it is something that I always look forward to during the weekend. Do I always find something.... no, but it almost without a doubt inspires me to get into the kitchen and whip an old favorite up or something completely new. Below are a list of some of my go to food magazines, either buy a copy or subscribe for a year you can't go wrong. Enjoy the reading and happy!!!

INGREDIENTS
300 g water
355 g tomatillos - whole
130 g zucchini - large dice
150 g neutral oil
175 g serrano chiles, stemmed
125 g white onion - diced
70 g garlic - whole
70 g cilantro
10 g kosher salt
INSTRUCTIONS
1. In a pot, add water, tomatillos, and zucchini. Cover and cook over medium heat until tender (about 15 minutes). Remove from water, discard liquid, and set aside the vegetables.
2. In a sauté pan, combine oil, serranos, onion, and garlic. Turn heat to medium and cook while stirring until everything is golden and tender (about 10 minutes). Remove from heat and cool at room temp.
3. In a blender, combine boiled tomatillos and zucchini with the fried mixture, cilantro, and salt. Purée on high until super creamy. Taste and adjust seasoning as needed.
